Summary: The employee in this position is responsible for ridding the kitchen area of garbage, cleaning the garbage cans, and lining the cans with new bags. He/she disinfects cutting boards by soaking in bleach and cleans dish area entirely before leaving. The individual must know the proper detergent for dispensers, as well as the proper amounts for pre-soaks. When needed, the employee assists in emergency cleanups. The person in this position is responsible for operating the dishwasher. This entails filling the dish machine properly and frequently changing all machine water and soaking solutions to maximize cleaning effectiveness. He/she works machine by sorting, scraping, and gently handling equipment, glassware and plateware. The individual must know how to refill any dispensers with proper type of equipment and be familiar with proper measurements for any hand-measured products. In case of problems with equipment, the employee must immediately notifying Sous Chef. This job also involves sweeping lines and corridors as requested, as well as removing trash, cleaning cans and replacing the trash bags.



Essential Duties and Responsibilities:

• Cleans kitchen after preparation and serving, maintaining high standards of cleanliness. Stores or discards excess food in accordance with safe food-handling procedures.
• Keeps refrigerators and storerooms clean and neat. Ensures food and supply items are stored per standards.
• Operates and maintains kitchen equipment as instructed.
• Assists in production planning, record keeping and reporting as required.
• Reports needed maintenance, faulty equipment or accidents to the supervisor immediately.
• Attends in-service and safety meetings.
• Maintains good working relationships with coworkers, customers, administrators and managers.
• Performs job safely while maintaining a clean, safe work environment.
• Performs other duties as assigned.
